This dissertation examined the roles of 1) motivation for healthy dietary habits, and 2) the meanings of eating behavior on dietary intake in Latino youth. Multiple objectives were addressed in the three studies that comprised this dissertation. This dissertation showed that both motivation and the meanings of eating behavior uniquely contributed to variance in dietary intake in Latino youth and show some promise as tools for understanding the affective determinants of dietary intake in minority children. Although the direct influence of motivation and meanings may be small, the information gained from these and future studies may point to new directions for interventions aimed at improving dietary choices.

Amid its growing diversity and shifting demographics, the U.S. is still home to glaring health inequities by race, ethnicity, and class. Yet while it is customary to identify poverty as their root cause, other complex mechanisms are involved in their perpetuation. Based on recent major studies on African-American, Latino, Asian-American, and Native American populations, Health Disparities in Youth and Families offers a thorough, nuanced examination of a wide range of causal—and protective—factors. Rigorous theories and models take into account cultural, contextual, and personal variables, including the roles of family identity, school, and neighborhood, and motivation toward health awareness (with attention paid to less frequently studied phenomena such as within-group inequalities and the Hispanic Health Paradox). Contributors approach their subjects with realism as well as optimism as the book: povides reliable information on the scope and etiology of health disparities, identifies the methodological and political challenges associated with this issue, proposes comprehensive, integrative models for understanding disparities, features examples of innovative programs for improving minority health, includes an in-depth chapter on substance use and mental health among Native American youth, offers a useful starting point for the exchange of ideas necessary to address health disparities.A provocative resource on a pressing social concern, Health Disparities in Youth and Families is necessary reading for health policy researchers, health care providers, and others dedicated to better health outcomes for all Americans.

Today's public schools represent greater student diversity than ever before in the history of the United States, yet pedagogical approaches as mandated by state education agencies and school districts superimpose mainstream curricula and instructional practices which ultimately disadvantage the academic outcomes of the majority minority: African American and Hispanic/Latino(a) students. Unfortunately, national report findings also heighten the educational crisis that exists for Black and Brown children with regard to reading and writing achievement. As a result, there is need to deeply explore the relationship between Black and Brown student literacy achievement and educational policy, teacher education program, curriculum, and assessment. This book seeks to provide some practical insights guided by conceptual and contextual knowledge by understanding how to teach urban African American and Hispanic/Latino(a) students by discussing culturally appropriate instructional strategies that have demonstrated success among African American and Hispanic/Latino(a) students. This book will showcase successful models for teaching literacy to urban student through a discussion of topics that include: (1) increasing literacy achievement and motivation, (2) multicultural literacy practices, and (3) early and elementary literacy instruction.

The Politics of Race in Latino Communities

Latinos are the fastest growing population group in the U.S. and have exerted widespread influence in numerous aspects of American culture from entertainment to economics. Unlike Asian, black, white, and Native Americans who are defined by race, Latinos can be of any race and are beginning to shed new light on the meanings and political implications of race. As the Latino population grows, how will Latinos come to define themselves racially given the long standing social order of black and white? What are the political implications of their chosen racial identities? How does Latinos' racial identity influence their political behavior and motivation for participation? The Politics of Race in Latino Communities is an innovative examination of development and political consequences of Latino racial identity in the U.S. Drawing on a national political survey of Latinos and focus group interviews, the book shows that development of Latino racial identity is a complex interaction between primordial ties, institutional practices, individual characteristics, and social interactions. Furthermore, the book highlights the political relevance of identity, showing that racial identity has meaningful consequences for the political attitudes, opinions, and behaviors of Latinos. An important piece of research propelling new discussions and insights into Latino politics.
